Much like prosciutto or guanciale, Ibérico ham is a thinly sliced ham, but it is the product of acorn-fed Black Iberian Pigs in Spain. We’ve partnered with Montaraz–a family farm in Extremadura, Spain, to source slowly grown, heirloom quality pork. The Black Iberian Pigs are raised on a diet of acorns with no antibiotics and allowed to roam freely and develop natural muscle and fat. A Nutritious Meat to Eat Black Iberian Pigs have meat that outclasses their competitors in taste and nutrients. Full of inflammation-fighting omega-9 fatty acids, like oleic acid, there is also a lower amount of saturated fats in Ibérico pork. Acorn-fed black ham has also been found to produce good cholesterol (HDL) while simultaneously reducing bad cholesterol (LDL).
